How does a photon carry and impart colour?

I'm skeptical about light theory and have many questions. I'll start with colour. Somehow a photon can carry it's colour frequency (whatever that is) from distant stars then hit the retina at the back of an eyeball and instantly impart a colour. That's a single parcel of energy coming off an electron which is pulsing? How is it's pulse detected in an instant? Is this pulsing simply an arbitrary idea?

Can someone please explain in layman's terms (that is what I am).
